Ingredients
Scale
- 2 cups uncooked pasta (penne or rotini)
- 1 can (12 oz) tuna, drained and flaked
- 2 cups fresh broccoli florets (or frozen, thawed)
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup breadcrumbs (for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Start by bringing a large pot of salted water to a boil. Once boiling, add the uncooked pasta and cook according to the package instructions until al dente (about 8-10 minutes).
- In the last 3 minutes of cooking the pasta, add the broccoli florets to the pot. Drain the pasta and broccoli in a colander and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
- Pour in the heavy cream and stir well. Allow the cream to simmer gently for about 3-4 minutes, stirring occasionally.
- Add the shredded mozzarella and grated Parmesan cheese to the skillet. Stir continuously until the cheeses melt and the sauce becomes creamy (about 3-5 minutes).
- Season the sauce with onion powder, garlic powder, black pepper, salt, and red pepper flakes (if using). Adjust seasoning to taste.
- In a large mixing bowl, combine the drained tuna, cooked pasta, and blanched broccoli. Gently fold in the creamy Alfredo sauce until well coated.
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with cooking spray or olive oil.
- Transfer the tuna, pasta, and broccoli mixture into the prepared baking dish, spreading it out evenly.
- In a small bowl, combine the breadcrumbs with a tablespoon of olive oil, mixing until evenly coated.
- Sprinkle the breadcrumb mixture evenly over the top of the casserole.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbling.
- Remove from the oven and let it sit for 5-10 minutes before serving.
- Garnish with freshly chopped parsley before serving.
- Pair with a simple side salad or crusty bread to soak up any extra sauce.
