Ingredients
Scale
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 1 cup crumbled shortcake (store-bought or homemade)
- 1/2 cup whipped cream (for topping)
- Fresh strawberries (for garnish)
Instructions
- Wash the fresh strawberries thoroughly under cold water. Hull and slice them into thin pieces to yield about 2 cups.
- In a medium bowl, combine the sliced strawberries with 1/2 cup of granulated sugar. Toss gently until well coated. Let sit at room temperature for about 30 minutes to macerate.
- In a large mixing bowl, whisk together 1 cup of heavy cream and 1 cup of whole milk until blended.
- Add 3/4 cup of sweetened condensed milk to the cream and milk mixture. Whisk until fully combined.
- Stir in 1 teaspoon of pure vanilla extract and whisk again until evenly distributed.
- Mash some of the macerated strawberries with a fork to create a chunky sauce, leaving some slices whole for texture. Pour the strawberry mixture, including the syrup, into the ice cream base and gently fold using a spatula.
- Crumble the shortcake into small pieces and add it to the ice cream mixture. Gently fold until evenly distributed.
- Transfer the mixture into an airtight container, smoothing the top with a spatula. Cover tightly and freeze for at least 4-6 hours, or overnight for best results.
- When ready to serve, let the ice cream sit at room temperature for 5-10 minutes to soften slightly. Scoop into bowls or cones.
- Top each serving with a dollop of whipped cream and sprinkle with extra crumbled shortcake. Garnish with fresh strawberries.
- Enjoy your homemade strawberry shortcake ice cream!
Notes
- For best flavor and texture, consume the ice cream within a week.
