Instructions

  1. Marinate the Chicken: Place the chicken breasts in a large bowl and pour the buttermilk over them. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour, or up to overnight.
  2. Prepare the Coating: In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
  3. Dredge the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing down to ensure a good coating. Shake off excess flour and set aside.
  4. Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch. Heat over medium-high until shimmering. Test with a pinch of flour; if it sizzles, the oil is ready.
