  • 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

  1. In a medium-sized bowl, combine the olive oil, soy sauce, honey, minced garlic, ground ginger, salt, black pepper, and lime juice.
  2. Whisk the ingredients together until well blended.
  3. Add the peeled and deveined shrimp to the bowl with the marinade.
  4. Gently toss the shrimp until fully coated.
  5. Cover the bowl with plastic wrap or transfer to a resealable plastic bag.
  6. Refrigerate for at least 30 minutes, but no longer than 2 hours.
  7. While the shrimp is marinating, cut the fresh pineapple and bell peppers into 1-inch pieces.
  8. If using wooden skewers, soak them in water for at least 30 minutes.
  9. Thread a piece of pineapple onto a skewer, followed by a piece of red bell pepper, a shrimp, and a piece of green bell pepper.
  10. Repeat until the skewer is filled, leaving space at the ends for handling.
  11. Aim for about 3-4 shrimp per skewer, alternating with the pineapple and bell peppers.
  12. Preheat your grill to medium-high heat and lightly oil the grates.
  13. Place the skewers on the grill, ensuring not to overcrowd them.
  14. Grill for about 2-3 minutes on each side, until the shrimp are pink and opaque, and the vegetables are slightly charred.
  15. Carefully remove the skewers from the grill and let them rest for a minute.
  16. Serve directly on the grill or transfer to a serving platter.
  17. Drizzle with leftover marinade (that hasn’t touched raw shrimp) and garnish with lime wedges and chopped cilantro.
