- 1 pound large shrimp, peeled and deveined
- 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lime juice
- Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

- In a medium-sized bowl, combine the olive oil, soy sauce, honey, minced garlic, ground ginger, salt, black pepper, and lime juice.
- Whisk the ingredients together until well blended.
- Add the peeled and deveined shrimp to the bowl with the marinade.
- Gently toss the shrimp until fully coated.
- Cover the bowl with plastic wrap or transfer to a resealable plastic bag.
- Refrigerate for at least 30 minutes, but no longer than 2 hours.
- While the shrimp is marinating, cut the fresh pineapple and bell peppers into 1-inch pieces.
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread a piece of pineapple onto a skewer, followed by a piece of red bell pepper, a shrimp, and a piece of green bell pepper.
- Repeat until the skewer is filled, leaving space at the ends for handling.
- Aim for about 3-4 shrimp per skewer, alternating with the pineapple and bell peppers.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Place the skewers on the grill, ensuring not to overcrowd them.
- Grill for about 2-3 minutes on each side, until the shrimp are pink and opaque, and the vegetables are slightly charred.
- Carefully remove the skewers from the grill and let them rest for a minute.
- Serve directly on the grill or transfer to a serving platter.
- Drizzle with leftover marinade (that hasn’t touched raw shrimp) and garnish with lime wedges and chopped cilantro.
