  • Author: Maria
  • Total Time: 60 minutes
  • Yield: 12 servings 1x

Description

This Pecan Cobbler is a warm and comforting dessert featuring a rich, nutty filling and fluffy batter. Ideal for gatherings or cozy nights, it pairs perfectly with whipped cream or vanilla ice cream for an indulgent treat.

Ingredients

Scale
  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup corn syrup
  • 1/2 teaspoon ground cinnamon (optional)
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the melted butter and both sugars (brown and granulated). Whisk until smooth.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon (if using).
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  7. Once combined, gently fold in the chopped pecans.
  8. In a medium bowl, combine the corn syrup and remaining chopped pecans. Optionally, add an additional 1/4 cup of brown sugar for a sweeter filling.
  9. Grease a 9×13-inch baking dish. Pour the batter into the dish and spread evenly.
  10. Spoon the pecan filling over the batter without stirring.
  11. Bake for 45-50 minutes until golden brown and a toothpick comes out clean.
  12. Allow to cool for 15-20 minutes before serving.

Notes

  • For a sweeter filling, consider adding more brown sugar to the corn syrup mixture.
  • Keep an eye on the cobbler during the last 10 minutes of baking to prevent over-browning.
  • Serve warm with whipped cream or vanilla ice cream for the best experience.
