  • 1/4 cup white vinegar

  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 tablespoon vegetable oil
  • 1/2 cup chicken broth (or water)
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a large mixing bowl, combine the soy sauce, white vinegar, and orange juice.
  2. Add the finely chopped onion and minced garlic to the marinade. Stir well.
  3. Incorporate the bay leaves, black peppercorns, dried oregano, and ground cumin into the marinade. Mix thoroughly.
  4. Place the chicken thighs into the marinade, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  5. Remove the chicken from the refrigerator and let it sit at room temperature for about 15 minutes.
  6. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
  7. Add the marinated chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown.
  8. Flip the chicken and sear the other side for an additional 5 minutes. Remove the chicken and set aside.
  9. In the same skillet, reduce heat to medium and add the remaining marinade. Deglaze the pan.
  10. Add the chicken broth (or water) and stir to combine.
  11. Return the seared chicken thighs to the skillet, skin-side up.
  12. Bring to a gentle simmer, cover, and cook for about 30-40 minutes.
  13. Check the chicken for doneness (internal temperature should reach 165°F/75°C).
  14. Remove the chicken and let it rest for a few minutes.
  15. Increase heat to medium-high and let the sauce simmer uncovered for 5-10 minutes. Season with salt to taste.
  16. Serve the chicken over a scoop of cooked rice, spooning sauce over the top.
