  • 4 fillets of white fish (such as cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 1 bell pepper (red or yellow), sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Whisk together until well blended.
  2. Place the fish fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fish, ensuring each fillet is well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes.
  3. While the fish is marinating, prepare the vegetables. Slice the red onion and bell pepper into thin strips. Halve the cherry tomatoes and set aside.
  4. In a large mixing bowl, combine the sliced red onion, bell pepper, halved cherry tomatoes, and Kalamata olives. Drizzle with a little olive oil and season with salt and pepper. Toss gently to combine.
  5. Preheat your oven to 400°F (200°C).
  6. Once the fish has marinated, remove it from the refrigerator. In a large baking dish, spread the prepared vegetable mixture evenly across the bottom.
  7. Carefully place the marinated fish fillets on top of the vegetables. Pour any remaining marinade over the fish.
  8. If desired, sprinkle a little extra paprika or herbs on top of the fish.
  9. Cover the baking dish with aluminum foil.
  10. Place the baking dish in the preheated oven and bake for 20 minutes.
  11. After 20 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
  12. Once the fish is done baking, remove the dish from the oven and let it rest for a few minutes.
  13. Carefully transfer the fish fillets to individual plates, along with a generous serving of the roasted vegetables.
  14. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
