- 4 fillets of white fish (such as cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 medium red onion, sliced
- 1 bell pepper (red or yellow), sliced
- 1/2 cup Kalamata olives, pitted and halved
- Fresh parsley, chopped (for garnish)
Instructions
- In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Whisk together until well blended.
- Place the fish fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fish, ensuring each fillet is well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes.
- While the fish is marinating, prepare the vegetables. Slice the red onion and bell pepper into thin strips. Halve the cherry tomatoes and set aside.
- In a large mixing bowl, combine the sliced red onion, bell pepper, halved cherry tomatoes, and Kalamata olives. Drizzle with a little olive oil and season with salt and pepper. Toss gently to combine.
- Preheat your oven to 400°F (200°C).
- Once the fish has marinated, remove it from the refrigerator. In a large baking dish, spread the prepared vegetable mixture evenly across the bottom.
- Carefully place the marinated fish fillets on top of the vegetables. Pour any remaining marinade over the fish.
- If desired, sprinkle a little extra paprika or herbs on top of the fish.
- Cover the baking dish with aluminum foil.
- Place the baking dish in the preheated oven and bake for 20 minutes.
- After 20 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Once the fish is done baking, remove the dish from the oven and let it rest for a few minutes.
- Carefully transfer the fish fillets to individual plates, along with a generous serving of the roasted vegetables.
- Garnish with freshly chopped parsley and serve with lemon wedges on the side.
