  • 1/2 cup freshly squeezed lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest (from about 1 lemon)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a medium mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of granulated sugar, 1/4 teaspoon of salt, and 1/2 teaspoon of baking powder. Whisk until well mixed.
  3. Add the softened butter to the dry ingredients. Using a pastry cutter or your fingers, mix until it resembles coarse crumbs with small pea-sized pieces of butter.
  4. Press the crumb mixture evenly into the bottom of the prepared baking dish, packing it down firmly.
  5. Bake the crust for about 15-20 minutes, or until lightly golden.
  6. In a large mixing bowl, combine 1 cup of granulated sugar, 1/4 cup of all-purpose flour, and 2 large eggs. Whisk until smooth and well combined.
  7. Add the freshly squeezed lemon juice and lemon zest, whisking until fully incorporated.
  8. Once the crust is done baking, pour the lemon filling over the hot crust and spread it evenly with a spatula.
  9. Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.
  10. Remove the baking dish from the oven and let it cool on a wire rack for about 30 minutes.
