Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Place the raw cashews on the prepared baking sheet in a single layer.
  4. In a small saucepan over low heat, combine honey, unsalted butter, sea salt, and ground cinnamon (if using). Stir until the butter melts and the mixture is well combined.
  5. Stir in vanilla extract if using.
  6. If desired, add granulated sugar to the honey mixture and stir until dissolved.
  7. Pour the honey mixture over the cashews on the baking sheet.
