Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Place the raw cashews on the prepared baking sheet in a single layer.
- In a small saucepan over low heat, combine honey, unsalted butter, sea salt, and ground cinnamon (if using). Stir until the butter melts and the mixture is well combined.
- Stir in vanilla extract if using.
- If desired, add granulated sugar to the honey mixture and stir until dissolved.
- Pour the honey mixture over the cashews on the baking sheet.
- Gently toss the cashews to ensure they are evenly coated.
- Spread the cashews back into a single layer on the baking sheet.
- Roast the cashews for about 10-15 minutes, keeping a close eye on them.
- Stir the cashews halfway through roasting to ensure even cooking.
- Once golden brown and fragrant, remove from the oven. If needed, continue roasting, checking every couple of minutes.
- Let the cashews cool on the baking sheet for 5-10 minutes.
- Gently break apart any clumped cashews while they are still warm.
- Transfer to an airtight container once completely cooled. Store at room temperature for up to two weeks or in the refrigerator for longer freshness.
