  • 2 filet mignon steaks (about 68 ounces each)
  • 8 large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper, to taste
  • 1 lemon, juiced
  • 1/4 cup white wine (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring the steaks to room temperature by taking the filet mignon steaks out of the refrigerator about 30 minutes before cooking.
  2. Generously season both sides of the steaks with salt and pepper.
  3. Heat a large skillet over medium-high heat.
  4. Once the skillet is hot, add 1 tablespoon of olive oil.
  5. Place the seasoned filet mignon in the skillet and sear for about 4-5 minutes on one side.
  6. After 4-5 minutes, flip the steaks and add 1 tablespoon of butter. Spoon the melted butter over the steaks.
  7. Continue cooking for another 4-5 minutes for medium-rare. Use a meat thermometer to check the internal temperature (130°F for medium-rare, 140°F for medium).
  8. Remove the steaks from the skillet and let them rest for about 5-10 minutes.
  9. Peel and devein the shrimp, rinse under cold water, and pat dry.
  10. Toss the shrimp with salt, pepper, and a squeeze of lemon juice.
  11. In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Sauté the minced garlic for about 30 seconds.
  12. Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side until pink and opaque.
  13. Sprinkle in the fresh thyme and rosemary. If using white wine, pour it in and let it simmer for 1-2 minutes.
  14. Place a filet mignon steak on each plate.
  15. Arrange the sautéed shrimp on top of each steak.
  16. Sprinkle with fresh parsley and add a lemon wedge if desired.
  17. Serve immediately while hot, paired with sides like garlic mashed potatoes or steamed asparagus.
