Instructions

  1. Place the eggs in a single layer in a saucepan, covering them with cold water by about an inch. Bring to a rolling boil over medium-high heat. Once boiling, cover and remove from heat. Let sit for 12-15 minutes.
  2. Prepare an ice bath in a large bowl with ice and cold water. After the eggs sit, transfer them to the ice bath for 5-10 minutes to cool.
  3. Gently tap each egg on a hard surface to crack the shell, then roll it between your hands to loosen. Peel starting from the wider end and rinse under cold water to remove shell fragments.
  4. Slice each egg in half lengthwise and remove the yolks into a mixing bowl. Mash the yolks until crumbly and smooth. Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Mix until creamy and well combined. Adjust seasoning as needed.
