Instructions
- Cut the salmon fillets into bite-sized pieces, about 1-inch cubes. Pat dry with paper towels.
- In a shallow bowl, mix together the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.
- In a second bowl, whisk the eggs until well combined.
- Place the panko breadcrumbs in a third bowl.
- Coat each salmon piece in the flour mixture, then dip in the egg mixture, and finally roll in the panko breadcrumbs, pressing gently to adhere.
- In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix until smooth and set aside.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Fry the breaded salmon bites in batches for about 3-4 minutes on each side until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
- Arrange the cooked salmon bites on a serving platter. Drizzle with Bang Bang sauce or serve on the side for dipping. Garnish with chopped cilantro.
