  • 1 cup of panko breadcrumbs

  • 2 large eggs

  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional, for heat)
  • 1/2 cup of mayonnaise
  • 2 tablespoons of sweet chili sauce
  • 1 tablespoon of sriracha (adjust to taste)
  • 1 tablespoon of lime juice
  • Fresh cilantro, chopped (for garnish)
  • Vegetable oil (for frying)

Instructions

  1. Cut the salmon fillets into bite-sized pieces, about 1 to 1.5 inches in size.
  2. In a medium bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using) to create a seasoned flour mixture.
  3. In another bowl, beat the eggs until well combined for the egg wash.
  4. In a third bowl, place the panko breadcrumbs.
  5. Dip a piece of salmon into the seasoned flour, ensuring it’s fully coated. Shake off excess flour.
  6. Next, dip the floured salmon piece into the egg wash, allowing excess to drip off.
  7. Roll the salmon in the panko breadcrumbs, pressing gently to adhere. Place coated salmon bites on a plate and repeat with remaining pieces.
  8. In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot.
  9. Carefully add salmon bites in batches, frying for about 3-4 minutes on each side until golden brown and crispy.
  10. Use a slotted spoon to remove salmon bites and place them on a paper towel-lined plate to drain excess oil.
  11. Continue frying remaining salmon bites, adjusting heat as necessary.
  12. In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until well mixed.
  13. Adjust sriracha to taste for desired spiciness.
  14. Taste the sauce and adjust sweetness or heat as needed.
  15. Serve the crispy Bang Bang salmon bites with the Bang Bang sauce on the side for dipping.
  16. Garnish with fresh chopped cilantro.
