- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup chia seeds
- 1/2 teaspoon baking soda

- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, rolled oats, chia seeds, baking soda, baking powder, and salt. Whisk until well mixed.
- In another bowl, mix the brown sugar and granulated sugar together. Add the applesauce, milk, vegetable oil, and vanilla extract. Whisk until smooth and well combined.
- Pour the wet ingredients into the dry ingredients. Gently fold the mixture together with a spatula or wooden spoon, being careful not to overmix.
- Once combined, fold in the chocolate chips, reserving a few for topping if desired.
- Line a muffin tin with paper liners or grease it with oil or cooking spray.
- Fill each muffin cup about 2/3 full with the batter.
- If reserved, sprinkle the remaining chocolate chips on top of each muffin.
- Bake in the preheated oven for 18-20 minutes, checking for doneness with a toothpick.
- Once baked, let the muffins cool in the tin for about 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
- Store cooled muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
- Enjoy as is or warm them in the microwave for 10-15 seconds. Add butter or honey for extra flavor!
