  • 1/4 cup chia seeds

  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, rolled oats, chia seeds, baking soda, baking powder, and salt. Whisk until well mixed.
  3. In another bowl, mix the brown sugar and granulated sugar together. Add the applesauce, milk, vegetable oil, and vanilla extract. Whisk until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients. Gently fold the mixture together with a spatula or wooden spoon, being careful not to overmix.
  5. Once combined, fold in the chocolate chips, reserving a few for topping if desired.
  6. Line a muffin tin with paper liners or grease it with oil or cooking spray.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. If reserved, sprinkle the remaining chocolate chips on top of each muffin.
  9. Bake in the preheated oven for 18-20 minutes, checking for doneness with a toothpick.
  10. Once baked, let the muffins cool in the tin for about 5 minutes.
  11. Transfer the muffins to a wire rack to cool completely.
  12. Store cooled muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
  13. Enjoy as is or warm them in the microwave for 10-15 seconds. Add butter or honey for extra flavor!
