  • 1/4 cup milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the cauliflower head thoroughly under cold water to remove any dirt or debris.
  3. Using a sharp knife, cut the cauliflower into bite-sized florets, ensuring they are roughly the same size for even cooking.
  4. In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper. Toss until the florets are evenly coated.
  5. Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper.
  6. Roast the cauliflower in the preheated oven for 20-25 minutes, or until the florets are tender and slightly golden brown, stirring halfway through.
  7. While the cauliflower is roasting, prepare the cheese sauce. In a medium saucepan over low heat, combine the softened cream cheese, sour cream, and milk.
  8. Stir the mixture continuously until the cream cheese is fully melted and the mixture is smooth and creamy.
