Ingredients
Scale
- 1 large head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the cauliflower head thoroughly under cold water to remove any dirt or debris.
- Using a sharp knife, cut the cauliflower into bite-sized florets, ensuring they are roughly the same size for even cooking.
- In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper. Toss until the florets are evenly coated.
- Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper.
- Roast the cauliflower in the preheated oven for 20-25 minutes, or until the florets are tender and slightly golden brown, stirring halfway through.
- While the cauliflower is roasting, prepare the cheese sauce. In a medium saucepan over low heat, combine the softened cream cheese, sour cream, and milk.
- Stir the mixture continuously until the cream cheese is fully melted and the mixture is smooth and creamy.
- Add the shredded cheddar cheese and grated Parmesan cheese to the saucepan. Continue stirring until the cheeses are melted and fully incorporated into the sauce.
- Mix in the Dijon mustard, smoked paprika, and cayenne pepper (if using). Stir until everything is well combined and the sauce is creamy. Remove from heat and set aside.
- Once the cauliflower is done roasting, remove it from the oven and let it cool for a few minutes.
- In a large mixing bowl, combine the roasted cauliflower with the cheese sauce. Gently fold the cauliflower into the sauce until all the florets are well coated.
- Transfer the cauliflower and cheese mixture into a greased 9×13-inch baking dish, spreading it out evenly.
- Sprinkle any remaining shredded cheddar cheese on top of the cauliflower mixture for an extra cheesy topping.
- Place the baking dish in the oven and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.
- If you prefer a crispier top, you can broil the dish for an additional 2-3 minutes, keeping a close eye to prevent burning.
- Once baked, remove the cheesy cauliflower from the oven and let it sit for about 5 minutes before serving.
- Garnish with chopped fresh parsley for a pop of color and added freshness.
- Serve warm as a delicious side dish or a vegetarian main course. Enjoy your cheesy baked cauliflower!
