- 1 egg (beaten, for egg wash)
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh herbs (like thyme or parsley) for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the asparagus under cold water and pat dry with a kitchen towel.
- Trim the tough ends of the asparagus by bending each spear until it snaps.
- In a large bowl, toss the asparagus with olive oil, garlic powder, onion powder, salt, and pepper until well-coated.
- Spread the seasoned asparagus on a baking sheet in a single layer and roast for 10-12 minutes until tender but still crisp. Remove and let cool slightly.
- In a medium bowl, combine softened cream cheese, shredded mozzarella, and grated Parmesan. Mix until creamy and smooth. Adjust seasoning if necessary.
- Lower the oven temperature to 375°F (190°C).
- On a floured surface, roll out the puff pastry to about 1/8 inch thick. Cut into rectangles or squares (about 4×4 inches).
- Place the cut pastry pieces on a parchment-lined baking sheet.
- Spoon a portion of the cheese mixture into the center of each pastry square.
- Lay a roasted asparagus spear on top of the cheese mixture, placing it diagonally.
- Fold the corners of the puff pastry over the filling to create a pocket. Seal the edges by pinching or crimping with a fork.
- Brush the tops of the pastries with the beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up. Cover with aluminum foil if browning too quickly.
- Remove from the oven and let cool for a few minutes before serving.
- Transfer to a serving platter and garnish with fresh herbs if desired.
