Enjoy these cheesy asparagus puff pastries, where tender roasted asparagus meets a creamy cheese filling, all wrapped in flaky puff pastry. Ideal for appetizers or a light meal, they are sure to impress your guests!

Ingredients

Scale
  • 1 sheet of puff pastry (thawed if frozen)
  • 1 bunch of fresh asparagus (about 1 pound)
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of cream cheese (softened)
  • 1/4 cup of grated Parmesan cheese
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the asparagus under cold water and pat dry with a kitchen towel.
  3. Trim the tough ends of the asparagus by bending each spear until it snaps.
  4. In a large bowl, toss the asparagus with olive oil, garlic powder, onion powder, salt, and pepper until well-coated.
  5. Spread the seasoned asparagus on a baking sheet in a single layer and roast for 10-12 minutes until tender but still crisp. Remove and let cool slightly.
  6. In a medium bowl, combine softened cream cheese, shredded mozzarella, and grated Parmesan. Mix until creamy and smooth. Adjust seasoning if necessary.
  7. Lower the oven temperature to 375°F (190°C).
  8. On a floured surface, roll out the puff pastry to about 1/8 inch thick. Cut into rectangles or squares (about 4×4 inches).
  9. Place the cut pastry pieces on a parchment-lined baking sheet.
  10. Spoon a portion of the cheese mixture into the center of each pastry square.
  11. Lay a roasted asparagus spear on top of the cheese mixture, placing it diagonally.
  12. Fold the corners of the puff pastry over the filling to create a pocket. Seal the edges by pinching or crimping with a fork.
  13. Brush the tops of the pastries with the beaten egg for a golden finish.
  14. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed up. Cover with aluminum foil if browning too quickly.
  15. Remove from the oven and let cool for a few minutes before serving.
  16. Transfer to a serving platter and garnish with fresh herbs if desired.

Notes

  • Ensure the puff pastry is fully thawed before rolling out for best results.
  • Feel free to customize the cheese mixture with your favorite cheeses or herbs.
