Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the cherry tomatoes under cold water, pat them dry, and cut each tomato in half.
- In a medium-sized mixing bowl, crumble the feta cheese using your hands or a fork.
- Measure out the olive oil, dried oregano, garlic powder, salt, and pepper.
- Drizzle the olive oil evenly across the bottom of a baking dish (approximately 8×8 inches).
- Spread the halved cherry tomatoes evenly across the baking dish.
- Sprinkle the crumbled feta cheese over the tomatoes.
- Sprinkle the dried oregano and garlic powder over the feta and tomatoes.
- Season the mixture with salt and pepper to taste.
- Place the baking dish in the preheated oven and bake for 20 minutes.
- Carefully remove the baking dish from the oven; the tomatoes should be blistered, and the feta should be soft and slightly golden.
- Gently stir the tomatoes and feta together to create a creamy mixture.
- Create four small wells in the feta and tomato mixture using the back of a spoon.
- Crack one egg into each well, being careful not to break the yolk.
- Season the eggs lightly with salt and pepper.
- Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Keep an eye on the dish during the last few minutes of baking to ensure the eggs do not overcook.
