- 1 cup cooked chicken, shredded

- 1/4 cup red onion, thinly sliced (optional)
- 1/4 cup pickles, sliced (optional)

- Cook the Chicken: If you dont have cooked chicken on hand, boil or bake chicken breasts until they reach an internal temperature of 165°F (about 20-30 minutes depending on thickness). Let it cool for a few minutes.
- Shred the Chicken: Using two forks, shred the chicken into bite-sized pieces.
- Mix with BBQ Sauce: In a medium bowl, combine the shredded chicken with the BBQ sauce. Stir until evenly coated.
- Choose Your Bread: Select your favorite bread, such as sourdough for its crusty exterior.
- Butter the Bread: Spread a thin layer of softened butter on one side of each slice of bread.
- Prepare the Cheese: If using block cheese, shred it now.
- Layer the Ingredients: On the unbuttered side of two slices of bread, add a generous layer of the BBQ chicken mixture, followed by a layer of shredded cheese. Add red onions or pickles if desired.
- Top with More Cheese: Add another layer of cheese on top of the toppings.
- Close the Sandwich: Place the other two slices of bread on top, buttered side facing out. Press down gently.
- Preheat the Oven: Preheat your oven to 375°F (190°C).
